Construction enters final stretch at Maricopa Someburros

[Submitted]

Maricopa residents eager to grab a burrito or taco from Someburros may not have much longer to wait.

Construction on Maricopa’s first Someburros restaurant is about two-thirds complete, and the Arizona-based chain remains optimistic it will open this fall.

The restaurant, under construction in the Stonegate development near Maricopa-Casa Grande Highway a, has steadily taken shape in recent months.

Someburros President Tim Vasquez told InMaricopa earlier this month he estimated construction is about two-thirds complete. Brick and stucco work have been completed on the exterior, while crews have framed and drywalled the interior, installed HVAC ductwork and placed kitchen hoods.

“As I walked it, I could visualize everything,” Vasquez said. “The AC ducts are in and we already have our hoods in the kitchen. So, it’s really far along.”

Work on underground utilities must be completed before crews can pave the parking lot and finish several exterior features, including canopies. Interior work, however, continues moving forward.

“But meanwhile, it’s full steam ahead on the interior of the building,” Vasquez said.

Someburros has been working toward a Maricopa location for more than a year after purchasing land in the Stonegate development. Vasquez said the city had long been on the company’s radar.

“We have some of our dear friends who live out there,” he said. “It’s been on our radar. They and their neighbors have been asking us for burros over the years. Finally, we found the right piece of property and were able to get that going.”

Although he stopped short of announcing a specific opening date, Vasquez said the company is optimistic residents won’t have to wait much longer.

“It’s been about a year and a half, but we hope to open this fall,” he said.

Once the restaurant opens, Someburros plans to hold a soft opening before hosting a larger grand opening celebration with a ribbon cutting, mariachis and other festivities.

“We really want to do a huge celebration because we are just so excited to be a part of the Maricopa community,” Vasquez said.

The idea of a third space is a gathering spot that isn’t work or home. Think a place like the cozy Central Perk coffee shop in "Friends" or the bar where everybody knows your name in "Cheers." Maricopa, what’s your favorite third space?
