Where’s Maricopa’s new Dominican food truck?

A business plan, lease agreement and photos filed with the city last week reveal that a new food truck bringing the flavors of the Dominican Republic is set to roll into Maricopa soon.

In fact, Authentic Dominican Food has already been spotted at Central Arizona College’s Maricopa campus in recent days, which means it’s getting ready to serve its first meals.

The opening date and menu have not been released yet, but we know the mobile eatery is currently parked with other trucks at CAC and has set up TikTok and Instagram accounts.

The business first filed paperwork with the Arizona Corporation Commission March 18.

Business filings released today show the trailer is owned by Copper Ridge resident Alfredo Jimenez. It will employ two people and will operate from 4 to 10 p.m. Monday through Thursday.

Jiminez is a military veteran, according to the filings. He did not respond to a request for comment by publication time.

Authentic Dominican Food is a first for Maricopa. Historically, the occasional home-cooked plate of comida dominicana would crop up for sale in a local Facebook group, but the cuisine has not previously established a real presence in the city.

Never had Dominican food? Some of the most iconic dishes you could try are sancocho, a comforting stew featuring root vegetables, and la bandera, a hearty dish composed of rice, beans and stewed meats representing the Dominican flag.
