Chicago pizzeria to start slinging pies in days

Maricopa, soon you’ll have another reason to cheese the day.

Queen Creek-based Vero Chicago Pizza plans to begin slinging its Windy City pies in early June at its storefront,19975 N. John Wayne Pkwy., Ste. 110.

Following the footsteps of Thai Chili 2 Go and Nando’s Mexican Café, the pizzeria plans to make the jump into Pinal County by opening its seventh location in Maricopa, said Director of Operations Alex Mejia.

“Maricopa is a growing city where it seems like more and more restaurants keep moving down there,” he said. “We wanted to be part of that experience and see how Maricopa treats Vero.”

What to expect

Due to the restaurant’s size, the pizza joint will only offer carry-out and delivery options in the storefront previously occupied by Dell’s Pizza.

“Unfortunately, we don’t have a dining area,” Mejia said, adding the space “was one of the only areas we found in town that was available for us to move into.”

Vero shoots for a June 3 grand opening, with a soft opening slated for late May. The soft opening will focus on deliveries through a third-party delivery service, such as DoorDash or Uber Eats.

A peek at the menu

Each of Vero’s 18 specialty pizzas is named after famous Chicago landmarks, like the Wrigley Field pizza topped with sausage, Italian beef, green peppers and onions.

And while Chicago-style pizza from a Chicago-born family is a given here in metro Phoenix, the Vero clan also serves more traditional-style pizzas, pastas, sandwiches and wings.

Mejia said one of his favorite dishes is the Italian beef sandwich, which features roast beef slices stuffed into a chunk of French bread and served with a steaming cup of beef au jus.

“For me, it’s the beef juice,” he said. “I enjoy the beefy, salty taste and I’m a big fan of the herbs used.”
