Ramen birria and pudding pancakes? It’s the Mexican brunchery officially replacing The Roost

Spicy ramen, s’mores French toast and tableside “trompito” for two.

That’s but a tasting of the unique flair you’ll find at Chilaquiles Modern Kitchen, the metro brunch spot that confirmed today it will open its second location in Maricopa in the coming weeks. 

The popular Mesa-based Mexican a.m. restaurant is now hiring staff at the soon-to-be-former sports bar The Roost, which will close its doors for good on Sunday. An employee at The Roost with knowledge of the acquisition confirmed last night that Chilaquiles intended to rehire her and other employees at the sports bar.

She said the restaurant could be open as early as February. 

The space at 20800 N. John Wayne Parkway, Suite 101, in The Shops at Maricopa Fiesta, is expected to be remodeled.

“It’s hard to believe it’s been a year since we first opened our doors and started serving up delicious chilaquiles,” the restaurant said in a statement today. “Now, we’re just weeks away from opening our second location [in] Maricopa.”   

The family-owned and -operated local restaurant is in a strip mall and has a “lively bar happy hour,” the website states.  

The restaurant serves brunch from 7 a.m. to 3 p.m. and offers catering services. It serves infused dishes “with a touch of tradition, transporting you straight to the streets of Mexico.” 

The restaurant is owned by Carlos Hidalgo, Arizona Corporation Commission documents show. Hidalgo was not available for comment today.

In May, the metro Phoenix foodie TikToker @TheRoamingRuby visited the West Mesa eatery on Southern Avenue, promising that the restaurant “has all your brunch needs covered” after sampling its bacon waffles, espresso martini and signature chilaquiles, among other dishes.

The TikTok has amassed more than 450,000 views and nearly 30,000 likes.
