Tacos on every street corner? Maricopa takes one step closer.
Chandler-based restaurant chain The Taco Spot has chosen Maricopa as one of three metro Phoenix cities getting new locations as the company continues to expand across the state.
The Taco Spot, known for its street tacos and birria ramen, is set to open in Maricopa’s Cobblestone Fiesta shopping center. The restaurant will take over the former Barro’s Pizza space at 44600 W. Smith-Enke Road, according to a city permit.
The permit, issued Aug. 27 to Cobblestone Fiesta LLC, doesn’t mention The Taco Spot by name. Instead, it authorizes interior renovations to turn the space from a quick-service shop into a sit-down taco restaurant, with no changes to parking or the building’s exterior.
The Taco Spot currently operates 19 restaurants in Arizona, and others in Texas, Utah, Florida and Missouri, with more expansion underway in West Virginia. A Maricopa location is listed as “coming soon,” but an address is not provided.
Currently, an “available” sign from Phoenix-based Rencor Development sits on a window and the interior appears demolished. InMaricopa reached out to the commercial real estate developer for details and is awaiting a response.
