Chilaquiles aced its first inspection. See how the restaurant has transformed

Chilaquiles Modern Kitchen, the Mexican brunch spot that opened last week at 20800 N. John Wayne Parkway, aced its first inspection on Tuesday.  

The restaurant that specializes in dishes like pudding pancakes and ramen birria was in perfect compliance, according to inspectors. Everything from manager certificates to food holding temperatures and sanitizing chemicals were in tip-top shape.  

Owner and Corporate Chef Juan Reyes said the Mesa-based company does its best to keep its locations “clean and safe,” especially since the Maricopa location’s first week was a busy one. 

“It’s been really, really busy every day. It’s great,” he told InMaricopa at the restaurant today. 

Their most popular item? Their namesake, of course. 

“The chilaquiles is the most popular,” he said. “We have seven different sauces, seven different meats, and you can create your own.” 

This is the first food inspection in the city this month. Last month, Pinal County Environmental Health handed out “excellent” rating to 19 schools and restaurants despite a few minor infractions. 

Haven’t had a chance to stop by the city’s newest dining spot? It looks vastly different from its former identity as The Roost Sports Bar & Café: bright, sunny and open.  

“It has a completely different vibe and menu,” Reyes said.
