It’s official, Maricopa: you now have a permanent location to get a plate of bulgogi in town.
Asian Seoul’s Copa Kitchen hosted the grand opening of its brick-and-mortar restaurant at 20924 N. John Wayne Pkwy., Ste. D7, to a packed dining room this evening.
Although the restaurant held a soft opening April 12, the menu was limited and owner Charlotte Stessel did not make any big announcements at the time.
“It is chaos, but I think overall everything has been great,” she said about the opening. “We’re just trying to get everyone served and we’re having a good time.”
Stessel opened the Asian fusion food truck in 2020 and its popularity grew along with its menu size. She said after more than four years in the truck, the time finally felt right to move into a storefront.
“This spot came up and we just jumped on it,” Stessel told InMaricopa in March.
Long-time Asian Seoul fans Tonia Belanger and her son, Gavin, said they have been patronizing the food truck for years and were excited to see Stessel make a dream come true.
“I’m excited for her,” Belanger said. “I’ll be sad the truck won’t be by my house anymore, but I’m excited that she opened up a storefront.”
And her son Gavin had just two words.
“It’s delicious,” he said between bites of spicy bulgogi.
