Maricopa’s first Someburros restaurant won’t open this fall after all.
A delay involving a utilities contractor has pushed the anticipated opening to mid-December, said Someburros owner Tim Vasquez.
“Unfortunately, it’s really out of our control,” Vazquez said.
In July, construction on the restaurant at Maricopa’s Stonegate development on Maricopa-Casa Grande Highway was about two-thirds complete. Vazquez had been shooting for a fall opening.
But now, he thinks they will have at least a month and a half of work left after the utilities issue is resolved.
However, Vasquez promises the grand opening celebration is going to be worth the wait, complete with mariachis, prizes and a donkey named Nacho.
Offering a peek at the menu, Vazquez said a favorite is the pollo fundido, featuring marinated chicken wrapped in a flour tortilla, deep-fried and topped with a jalapeño cream cheese. The kicker is the addition of his nana’s rice.
The most popular combo, however, is the No. 9.
The combo offers two tacos with a choice of shredded chicken, shredded beef or ground beef and potato tacos with rice and beans.
While the restaurant will have a drive-through for those in a hurry, a dining room is available for Maricopans craving a sit-down experience.
“We’re really excited, Maricopa has been wanting more sit-down restaurants,” Vazquez said. “We just can’t wait to be open for the community.”
